My parents came to DC for the 4th which was so fun! We saw lots of sights and fireworks and ate great food; lots of wonderful memories were made! On their last day here it started pouring, and we wanted to get lunch somewhere where we could drive and park without getting soaking wet. Enter the Nordstrom cafe (side note: it’s hard to eat out in a city and find connected, covered parking!) Along with some good sandwiches we indulged on their Lemon Ricotta cookies and they were sooo good. After one bite I knew I had to make them myself, and on my next trip to the grocery store I got the ingredients to do just that.

I used this recipe. I put the dough in the refrigerator for 4 hours before I froze it for 6 hours, and I baked them for 24 minutes (instead of 22). You can also freeze the dough overnight if that works better.

It made about two batches of large cookies. My biggest piece of advice is to frost all of the cookies immediately after baking the icing. If you wait at all the lemon juice starts to separate. In addition, store them in the refrigerator.

I can’t believe it’s been a few weeks since I baked some dessert! My sweet tooth has been going crazy, lol. But seriously, our house sans any cookies…it’s definitely full of less joy! So, yesterday I decided that the cookie monster in me won over anything else I needed to do and I made some white chocolate pistachio cookies. Guys, they are so good! The salty pistachios mixed with the sweet chocolate chips is the perfect combination! I have no doubt these cookies are going to become a part of my regular rotation, especially since we already had all of the ingredients but the pistachios. Here’s the recipe -

  • 1 cup unsalted butter

  • 1/2 cup light brown sugar

  • 1/4 cup granulated sugar

  • 1 tsp sea salt

  • 1 tbsp vanila

  • 1/2 cup honey

  • 1 egg

  • 1 tsp baking soda

  • 2 1/2 cups flour

  • 1 cup chopped and shelled pistachios

  • 1 cup white chocolate chips

Brown the butter in a small saucepan on the stove and let cool for 20 minutes. Combine the browned butter and both sugars in a mixer at medium speed for one minute. Add in the salt, vanilla, honey, egg and baking soda and mix until combined, about one minute. Mix in the flour on low until just combined. Stir in the chocolate chips and pistachios. Bake at 350 for 8 minutes. Let cool and enjoy!!

Raspberry White Chocolate Chip Cookies

Raspberry White Chocolate Chip Cookies

Over the weekend my sweet tooth struck again and I baked some raspberry white chocolate chip cookies. I was initially going to use my favorite chocolate chip cookie recipe, but when I realized I was unexpectedly out of cake flour I decided to try out a new recipe. I was very pleased with the results! The cookies were soft and chewy and brimming with chocolate. Plus, the ingredients are all things I already had in the pantry. Here’s how you make them:

Raspberry White Chocolate Chip Cookies

Whisk together the flour, baking powder, baking soda, cornstarch and salt. Set aside and cream together the butter and sugars. Add in the egg and vanilla. Slowly add in the dry ingredients and mix until just combined. Stir in the chocolate chips and raspberries, and spoon out 1” rounds on a baking sheet. Bake at 350 for 11 minutes.

*I made two batches - one immediately after I mixed the ingredients and one where I let the dough sit in the fridge overnight. I don’t think letting the dough sit over night is necessary; the cookies tasted the same, and since the raspberries had melted overnight it was a lot messier to spoon out the cookies.

Aren’t these cookies perfect for Valentine’s Day? I love that they’re pink! Plus, they tasted positively scrumptious and were super easy to make. A lot of cookie recipes require you to chill the dough for a while, but with these Strawberry White Chocolate Chip cookies you just mixed together the ingredients and popped them right into the oven. Perfect for a last minute treat for your girlfriends or significant other! Also, you can easily switch the white chocolate chips for chocolate if you prefer.

To make:

Cream together 1 cup softened butter, 1 cup sugar and 2 tbsp strawberry jello mix. Then add in 1 tsp vanilla and 2 eggs. In a separate bowl whisk together 2 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt and one package vanilla instant pudding mix. Slowly beat these dry ingredients into the cookie batter. Once combined stir in one bag chocolate chips. Roll into 1 inch balls and bake for 11 minute at 350. Enjoy with a glass of milk!

White Chocolate Cranberry Oatmeal Cookies

The other day I made my second batch of Christmas cookies, with my second new recipe. I decided on White Chocolate Cranberry Oatmeal Cookies as something a little lighter, since the triple chocolate peppermint cookies I made are rather heavy (though delicious). These cookies were very simple to make, and don’t require any fancy ingredients. Also, the dough doesn’t spread so you can fit a lot on a baking sheet, which makes the baking process a lot faster!

  • 1 cup flour

  • 1/2 tsp baking soda

  • 1/2 tsp cinammon

  • 1/4 tsp salt

  • 1 stick unsalted butter

  • 1/2 cup light brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 1/2 cups old fashioned oats

  • 3/4 cups dried cranberries

  • 3/4 cups white chocolate chips

Whisk together 1 cup flour, 1/2 tsp baking soda, 1/2 tsp cinnamon and 1/4 tsp salt in a large bowl and set aside. Cream together 1 stick unsalted butter, 1/2 cup light brown sugar and 1/4 cup granulated sugar. Next, add in 1 egg and 1 tsp vanilla. Add in the flour mixture gradually until just combined. Next stir in 1 1/2 cups old fashioned oats, 3/4 cup dried cranberries and 3/4 cup white chocolate chips (though feel free to add more). Let the dough sit in the refrigerator at least 30 minutes, then bake at 350 for 11 minutes. Enjoy!

Triple Chocolate Peppermint Cookies

Triple Chocolate Peppermint Treats

One of my goals for the holiday season is to try out three new cookie recipes. I decided to start with this triple chocolate peppermint cookies. The cookies are chocolate, with dark and milk chocolate chips, with a white chocolate cream cheese frosting. They are very rich and very delicious. The perfect holiday accompaniment to a glass of milk or eggnog!

Triple Chocolate Peppermint Treats

To make -

Cream 1 cup unsalted butter, 1 cup brown sugar and 1/2 cup granulated sugar. Beat in 2 eggs and 2 tsps vanilla. In a separate bowl, whisk together 2 1/2 cups flour, 3/4 cups cocoa, a dash of salt and 1 tsp baking soda. Beat dry ingredients into dough a little at a time. Finally, stir in 1 cup semi-sweet chocolate chips and 1/2 cup 60% cocoa chocolate chips. Bake at 375 for 8-9 minutes. Let cool a couple hours before frosting.

Triple Chocolate Peppermint Treats

For frosting beat 4 ounces cream cheese and 3 cups confectioners' sugar until smooth. Melt 1/2 cup white chocolate chips in the microwave for 30 seconds and then 30 seconds again. Add to cream cheese mixture. Add splashes of 2% milk until you reach a smooth consistency. Lastly, after you frost the cookies sprinkle on crushed peppermint candies. (To crush the peppermint I bought mini candy canes and placed them with a ziplock bag, and then crushed them with a rolling pin.)

The Best White Chocolate Chip Macadamia Cookie Recipe

This weekend I wanted to try and bake something new, so I put together a white chocolate chip macadamia cookie recipe. The cookies hit the spot! I brought them to my parents, and they were a hit! We only have a few left, and that might not be the case tomorrow...

White Chocolate Chip Macadamia Cookie Recipe

Here's the recipe:

Whisk together: 2 cups minus 2 Tbsp. cake flour (8 1/2 oz), 1 2/3 cups bread flour (8 1/2 oz), 1 ¼ tsp. baking soda, 1 ½ tsp. baking powder, and 3/4 tsp. coarse salt, such as kosher. Set aside.

Cream together 2 ½ sticks (1 ¼ cups; 10 oz.) unsalted butter, softened, 1 ¼ cups (10 oz.) light brown sugar. 1 cup plus 2 Tbsp. (8 oz.) granulated sugar. Once light and fluffy add in 2 eggs (one at a time) and then 2 tsp. vanilla extract.

Add in dry ingredients a little at a time until combined. Finally, add in one bag white chocolate chips and 1 cup macadamia nuts.

Refrigerate the dough 24-36 hours. Once the dough is ready, bake at 350 for 10-13 minutes depending on the oven.

Sprinkle Cookies

Sprinkle Cookies

After going to Momofuku Milk Bar last weekend I was inspired to bake this weekend. I don't need much convincing to make something sweet, so it didn't take too much thought before I decided to try to make sprinkle cookies. These are my favorite treat from Milk Bar, so getting to enjoy them all week is going to be wonderful.

I used this recipe and my Kitchenaid Mixer, and they turned out delicious! Other than my mixer I used a standard baking sheet and a cooling rack. I highly recommend using a cooling rack whenever you bake, since otherwise the cookies will keep on cooking after you take them out of the oven.

The only caveat to this recipe is that it required a few ingredients I didn't have on hand, namely corn syrup, powdered milk and grape seed oil. Also, just FYI, I tried to swap out the grape seed oil for canola oil, and the dough of the cake crumbs wasn't perfect. Next time I'll use grape seed oil.

Smores Cookie Recipe

I am so excited to share this amores cookie recipe with all of you! These cookies were so easy to make, and they are delicious. I also like the twist on the classic s'more, which I am of course a huge fan of.

Here's the recipe:

Combine 3/4 cup (1 1/2 sticks) unsalted butter, 3/4 cup light brown sugar, 1/4 cup granulated sugar, 1 egg, 2 teaspoons vanilla. Mix until combined, which takes about 5 minutes. 

Next add in 1 3/4 cups flour, 2 teaspoons cornstarch, 1 teaspoon baking soda, a pinch salt. Finally, stir in 4 full-size crushed graham crackers (I put them in a zip lock bag and pound them with a rolling pin), 2 cups chocolate chips, 1 1/4 cups mini marshmallows.

Let sit in the refrigerator at least 2 hours (this keeps them from spreading out when they bake). Bake at 350 about 8 minutes (they get firmer as they cool). Make sure to grease your cookie sheet, the marshmallows make these cookies sticky.

The Best Sugar Cookie Recipe

I have been craving some home made cookies for weeks, and finally had the time over the weekend to make some. I love to bake, and have made a lot of cookies over the years, and finally found the best sugar cookie recipe. Carly originally posted the recipe a few years ago, and every time I used it the cookies are light and fluffy, the dough isn’t too sticky for cutouts, and they come out perfect. 

Best Sugar Cookie Recipe

You’ll need: 

- 2 sticks of butter

- 1 1/2 cups of powdered sugar

- 1 egg

- 2 tsp. vanilla

- 2 3/4 cups flour  

- 2 tsp. Baking powder

- 1 tsp. salt

Let the butter and egg sit out on the counter to come to room temperature. Next, use a mixer to cream together the butter and powdered sugar. Add in the vanilla and egg and mix to combine. In a separate bowl, combine the flour, baking powder and salt. Gradually add these dry ingredients to the butter mixture, and mix until the dough is fully combined. It shouldn’t be too sticky; if it is add a little more flour. Refrigerate for at least an hour (can be refrigerated overnight).

Roll out onto a clean surface dusted with flour. Cut out cookies in whatever shapes and sizes you wish, and bake at 400 for 6-8 minutes. Once the cookies are removed from the over, immediately remove from the baking sheet and place on a cooling rack - otherwise the cookies will continue cooking on the hot baking sheet.

If you choose to frost the cookies, here is a great royal icing recipe

 - 5 tbsp meringue powder

- 3/4 cup of water

- 1 tsp. cream of tarter  

- 2 lbs of powdered sugar

Use the whisk attachment on your mixer to mix the meringue powder and water for 30 seconds. Add cream of tarter and mix another 30 seconds. Switch to the paddle attachments and add in the powdered sugar a little bit at a time. Combine until the icing is stiff enough to hold a point. Cover with a damp paper towel immediately so it doesn’t harden. Use a pastry bag and decorating tip to decorate. If you would like to use different colors, separate the frosting into different bowls and add a little food coloring to each one. Also, the frosting that you want to be the middle should be a thinner consistency. To thin, add more milk.
