White Chocolate Chip Pistachio Cookies

I can’t believe it’s been a few weeks since I baked some dessert! My sweet tooth has been going crazy, lol. But seriously, our house sans any cookies…it’s definitely full of less joy! So, yesterday I decided that the cookie monster in me won over anything else I needed to do and I made some white chocolate pistachio cookies. Guys, they are so good! The salty pistachios mixed with the sweet chocolate chips is the perfect combination! I have no doubt these cookies are going to become a part of my regular rotation, especially since we already had all of the ingredients but the pistachios. Here’s the recipe -

  • 1 cup unsalted butter

  • 1/2 cup light brown sugar

  • 1/4 cup granulated sugar

  • 1 tsp sea salt

  • 1 tbsp vanila

  • 1/2 cup honey

  • 1 egg

  • 1 tsp baking soda

  • 2 1/2 cups flour

  • 1 cup chopped and shelled pistachios

  • 1 cup white chocolate chips

Brown the butter in a small saucepan on the stove and let cool for 20 minutes. Combine the browned butter and both sugars in a mixer at medium speed for one minute. Add in the salt, vanilla, honey, egg and baking soda and mix until combined, about one minute. Mix in the flour on low until just combined. Stir in the chocolate chips and pistachios. Bake at 350 for 8 minutes. Let cool and enjoy!!

The Best White Chocolate Chip Macadamia Cookie Recipe

This weekend I wanted to try and bake something new, so I put together a white chocolate chip macadamia cookie recipe. The cookies hit the spot! I brought them to my parents, and they were a hit! We only have a few left, and that might not be the case tomorrow...

White Chocolate Chip Macadamia Cookie Recipe

Here's the recipe:

Whisk together: 2 cups minus 2 Tbsp. cake flour (8 1/2 oz), 1 2/3 cups bread flour (8 1/2 oz), 1 ¼ tsp. baking soda, 1 ½ tsp. baking powder, and 3/4 tsp. coarse salt, such as kosher. Set aside.

Cream together 2 ½ sticks (1 ¼ cups; 10 oz.) unsalted butter, softened, 1 ¼ cups (10 oz.) light brown sugar. 1 cup plus 2 Tbsp. (8 oz.) granulated sugar. Once light and fluffy add in 2 eggs (one at a time) and then 2 tsp. vanilla extract.

Add in dry ingredients a little at a time until combined. Finally, add in one bag white chocolate chips and 1 cup macadamia nuts.

Refrigerate the dough 24-36 hours. Once the dough is ready, bake at 350 for 10-13 minutes depending on the oven.
